Every food blog is filled with great ideas on how to re-invent Thanksgiving leftovers. For me, it doesn’t get much better than the humble turkey sandwich. After spending all week preparing for Thanksgiving dinner, I can’t imagine spending the next day cooking in any capacity. A sandwich is the easiest way for me to avoid doing any additional work, so I can focus my energy on more important things, like Black Friday shopping. Unfortunately, my family doesn’t share my same affection for a simple sandwich so I’m forced to jazz it up in a way that tricks them into thinking I whipped up something fabulous. The key is good French bread and a good quality cheese (I like Havarti, but anything other than processed American cheese will work). I place the sliced bread in a 350 degree oven for 5 minutes to toast it. Then I top each slice with mayo, turkey, and cheese and place back in the oven for 5-7 minutes to melt the cheese. Top with leftover cranberry sauce and voila! The humble turkey sandwich is transformed into happiness in sandwich form.
